Izzy’s Easy Bake Egg Cakes


I tried out a new recipe I decided to whip up today! Let me tell youuuuuu, these are yummmmmmy 😄😄😄! I had Moo try them out and she loved them so you even have the toddler seal of approval✔👊! For those of you like myself who keep an eye on your macro count these are super macro friendly, easy to make, and you can keep them in the fridge or freeze them and microwave them later! Below is the step by step to what you need to make these yummy breakfast bites:

4 large eggs (whole egg including the yolk)

4 large egg whites

2 slices of turkey bacon (I used Jennie-O)

1/4 cup of Mexican shredded cheese (I used Kroger brand)

1 tsp of minced garlic (I used spice world brand)

1 oz of spinach

1 tbsp of chopped onion (I used yellow)

1/2 cup red bell pepper

Muffin or cupcake pan to hold 12 muffins

Cupcake liners (this way you avoid using cooking spray or oil)

1) Pre heat your oven to 350°F. 

2) In a 2-4 cup measuring cup whisk your eggs and add in your shredded cheese.

3) Chop up your veggies and bacon nice and fine and sauteed them in a pan for 5mins or until the peppers are nice and soft.

4) Toss the sauteed veggie and bacon mix into the measuring cup with your eggs and whisk them together.

5) Add your cupcake liners to your pan and pour the egg mixture in filling each cup 2/3 full. 

6) Bake 15 mins or until the tips are firm or you can insert a toothpick and it comes out clean.

7) Let them cool on the counter and then enjoy! 

Store them in the fridge or freeze and microwave when your ready to eat!

3 Days Post Op!


Finally free from the hospital.  I must say last night was rough. I got home I was tired and in pain (didn’t get my last full dose of  pain meds in hospital cuz they tried and my IV blew…yay for me….). I was cranky and way too emotional.  My parents called to check up on me and I had a total breakdown explaining to them that it was hard to breathe or talk loud and that my tummy looked like this

I know it must seem super vain considering I JUST had surgery but when fitness is your job, your passion amd what you absolutely LOVE to do and you can’t do it for 3 months, not to mention you had just been busting ur ass for over 10 weeks (to try and build one) so you could hit the stage at one of the biggest shows in america (Las Vegas Fitness America Weekend) for your Bikini debut it seems a lil moment of frustration is warranted.  I am grateful for parents who love me unconditionally and have no shame about putting me in my place when I come to them with shenanigans like this! My moms exact words were “Omg ur stomach will go back to what it was  don’t be stupid!!!”…so I woke up today feeling better than yesterday and even got my butt to the store to buy (yet some more) SOUP! I was proud of myself for getting up and out of the house but knew better than to try and load groceries into the car myself so I used the regular checkout at Fry’s instead of self checkout (which always lets me double coupon so you know I would have avoided if at all possible) and asked for help out to the car. Since I am on liquids only, even my pain meds are liquid…(which tastes Oh soooooo NASTY!!) and now I’m back to being drowsy! It’s now 9pm and right about now a handful of my friends are ready to hit the stage at the NPC West Regional Bikini, Figure, Bodybuilding and Physique show in Mesa! Some of them are doing it for their 2nd 3rd or 4th time and some for their very 1st! I’m sad I couldn’t go to the show to cheer them on but in my current state my cheers would be more like whispers lol. So I’m shouting out a huge GOOD LUCK to all my BEASTS!!!I know your gonna kill it. As for me I will spend tomorrow afternoon after my friends baby shower looking for another nearby WBFF show to do in the spring, cuz baybayyyy with my suit I just picked up this week….I’m gonna KILL IT!!! Each day gets better…and tomorrow will be a great one. I am blown away by the outpouring of support from friends and family who have made me feel so loved! And on the other hand I do have to say im pretty disappointed in the people I thought were my friends who haven’t even bothered to check on me. You know what they say people are in your life for a reason, or a season. The season is over and I will continue to surround myself with quality, loving,  caring, supportive individuals. I light of recent events I am inspired to add a new bunch of fitness related things to my bucket list, and look forward to crushing them all when i’m cleared to get back at it :-):-) (if you have any suggestions list em in the comment section) I can’t even begin to tell you how much I ♡ each and every one of you!
